One of the major perks of living in Germany is not only the proximity to all of Europe/Africa but also, the amount of holidays we get. And for Easter, we got both the Friday and Monday off to make a perfect little 4 day weekend. We've learned never to waste a long weekend, because within those 4 days, you can experience the most amazing things in the world... and this time we really did.

Our 1st Year in Germany - Favorites from around the World
Only one year after packing up our lives in Boston, US to move to Nuremberg, Germany we have checked quite a bit off of our bucket list so far. Now if anyone knows us, they know that we LOVE trying new foods, new restaurants, new drinks, new food markets... can you see a trend here? So I thought the next best "Year in Review" post should be all about our favorite restaurants, bars and food markets.
Living in Germany - Our 1st Year in Review
As of February 16th 2016, we have hit our 1 year German-iversary! And with this big milestone, I am hoping to write a few blog posts reviewing some of our favorite moments. (favorite travel destinations, favorite restaurants, etc).
But for today, I'm going to start with some of our learning experiences.

The Pares Family European Tour
In October my amazing family (minus Jeffrey, Kristen, Ryan and Talia) came to visit us in Europe. As they've only visited Italy in the past, they decided to do an extensive European tour (in just two weeks!). My parents started in London, then onto Amsterdam, Brussels, Brugges, and then ended their guided tour in Paris where the rest of us "kids" came to join.

THE Newby Kale Salad with lemon mustard vinaigrette
Ok, here it is... this is the recipe for our absolute FAVORITE Kale salad. This became our go-to recipe during our months of "wedding prep" with paleo-healthy eating. We would make a big batch for dinner, and then pack some for us to take for lunch the next day. (that way we had no excuse to get tempted and eat badly). One of the amazing things about this salad (other than being SUPER healthy) is the fact that you can add whatever toppings you want and it will taste amazing!

We arrived in Mallorca on a late Monday night after spending the weekend in Barcelona. Prior to the trip I did some researching to get an idea of how we should spend our days. The island is quite big, on the west coast you will find the Tramuntana Mountain Ridge along the water and on the right side more calm beaches and coves.
