Pumpkin Chocolate Chip Cookies

These are by far - my most favorite cookies in the world. I could literally eat an entire batch myself. They taste like bite-size pieces of pumpkiny-fall, with little delicious chocolate bits. 

Now i'll admit, I cannot believe i'm actually posting this recipe on the blog. I originally got this recipe when I was in a junior high cooking class, and since then - i've been VERY secretive of this recipe. I don't exactly know why... I think I wanted it to be 'my specialty'. And I am not elaborating on this, there was one day (my mom can vouch for this) that I came home to my little sister making these cookies with my recipe and I literally threw a temper tantrum. (and i was probably 19 years old...) not my finest moment. 

But... I'd like to think that I am now older... more mature... and have learned to share. (sometimes)

This is a super quick and easy recipe to make, but if you're living in Germany... there may be some added steps.

  1. I cannot find good chocolate chips here! They're all tiny little waxy-cheap chocolate, which is odd because Germany has amazing chocolate. So I end up buying the fancy chocolate bars and chopping them up.
  2. Germany does not have 'canned pumpkin'. So when they make pumpkin recipes... they make it from a real pumpkin!! Like, slice it, bake it, blend it. Now as wonderfully martha-stewarty as that sounds, that is just too much work. 

So on the left is the American canned pumpkin (its only pumpkin mash, nothing added) and on the right is the closest thing you'll find to this in Germany (thanks to a friend who gave this as a gift!). But it honestly looks more like pumpkin soup. You cannot find the canned pumpkin on the left anywhere in Germany... so I have to secretly import these every time I go home!

 

PUMPKIN CHOCOLATE CHIP COOKIES RECIPE

INGREDIENTS:

  • 1 CUP SUGAR
  • 1/2 CUP UNSALTED BUTTER  (SOFTENED)
  • 1 EGG
  • 1 TSP VANILLA
  • 2 1/2 CUPS OF FLOUR
  • 1 TSP BAKING POWDER
  • 1 TSP BAKING SODA
  • 2 TSP CINNAMON
  • 1 TSP NUTMEG
  • 1/2 TSP SALT
  • 1 CUP PUMPKIN
  • 1 CUP CHOCOLATE CHIPS (I PREFER DARK CHOCOLATE OR SEMI SWEET)

DIRECTIONS:

  1. Preheat the oven to 350 f.
  2. Blend/cream the sugar, butter, egg & vanilla
  3. Sift together the dry ingredients (i'll admit, i skip this step and it still turns out delicious!)
  4. Add sifted ingredients (a little at a time) to the creamed sugar, butter, egg and vanilla mixture and blend on low at first. (the reason you don't add everything together at once is it'll make a flour-y mess all over your kitchen). At this point it can look a bit crumbly - thats normal! 
  5. Add the pumpkin and blend until well combined. 
  6. Mix in (with a spoon) the chocolate chips
  7. Drop by rounded teaspoons onto a non-stick baking sheet
  8. Bake for about 18-20 minutes. 
  9. Take them out, let them cool on a cooling rack and enjoy!!
